Spicy Thai Chicken

WHAT YOU’LL NEED
2 chicken breasts, cut into cubes
1/2 onion (red or yellow), diced
4 mini sweet peppers, assorted colours, sliced
2 tbsp lemongrass paste
2 large garlic cloves, minced
1 thumb-sized piece of fresh ginger, minced
1/2 hot red pepper, sliced (adjust to spice level)
1 heaping tbsp peanut butter
1 (400 ml) can coconut milk
200 ml chicken broth
2 tbsp dark soy sauce
1 tbsp fish sauce
1 tbsp honey
1 lime, juiced
Peanuts, fresh scallions, and cilantro for garnish
Rice, for serving
INSTRUCTIONS
Prep the Ingredients: Cut the chicken breasts into cubes or strips, dice the onion, slice the mini sweet peppers, and mince the garlic, ginger, and red pepper. Set everything aside.
Cook the Chicken: Heat a bit of oil in a large pan over medium-high heat. Add the chicken cubes and cook for about 5-7 minutes, until browned on all sides and cooked through. Remove the chicken from the pan and set it aside.
Sauté the Veggies: In the same pan, add a little more oil if needed. Sauté the onion, sweet peppers, garlic, ginger, and red pepper for about 3-4 minutes, until softened and fragrant.
Make the Sauce: Add the lemongrass paste, peanut butter, coconut milk, chicken broth, soy sauce, fish sauce, and honey to the pan. Stir everything together until the peanut butter is fully melted and the sauce is smooth. Bring the mixture to a simmer for about 20 minutes, stirring occasionally. This will allow the flavours to deepen and the sauce to thicken to the perfect consistency. If it gets too thick, add a little more chicken broth to loosen it up. If it’s too thin, you can add 1 tsp of cornstarch.
Combine the Chicken and Sauce: Return the cooked chicken to the pan, stirring to coat it in the sauce. Let it simmer for an additional 2-3 minutes. Stir in the fresh lime juice just before serving.
Serve: Serve the spicy Thai chicken over rice, and top with crushed peanuts, fresh scallions, and cilantro for extra flavour and crunch.
