Fluffy Blueberry Protein Pancakes

WHAT YOU’LL NEED

  • 1/2 cup cottage cheese

  • 2 large eggs

  • 1/4 cup milk

  • 1 tbsp melted butter

  • 1 cup flour

  • 1 1/2 tsp baking powder

  • Handful of fresh blueberries

  • Maple syrup

  • Optional: banana garnish

INSTRUCTIONS

  1. Blend the Wet Ingredients: Start by adding the cottage cheese, eggs, milk, and melted butter to a blender. Blend everything together until it’s smooth and creamy.

  2. Add the Dry Ingredients: In a bowl, combine the flour and baking powder. Slowly fold the dry ingredients into the wet mixture until just combined. Be careful not to over mix, or your pancakes might be tough. Gently stir in a handful of fresh blueberries.

  3. Cook the Pancakes: Heat a pan or griddle over medium heat and add a good amount of butter to coat the surface. Scoop about 1/4 cup of batter onto the pan for each pancake. Cook for about 2-3 minutes on the first side, until bubbles start to form on the surface. Flip and cook for another 1-2 minutes, until both sides are golden brown.
