Crunchy Celery Herb Salad

Yep, I think it’s safe to say this is my current salad obsession. This crunchy celery salad is the perfect mix of fresh, crisp, and slightly sweet flavours. Think bright celery, juicy apples, sweet dates, and roasted pecans—all tossed together with a creamy, herby dressing that brings it all to life. It’s light yet satisfying, packed with texture, and perfect as a side dish or a refreshing lunch. Plus, with microgreens and parmesan, it’s got that fancy touch that makes every bite extra delicious.
WHAT YOU’LL NEED
4 celery stalks, thinly sliced
2 small Honeycrisp apples, diced
1 red bell pepper, chopped
1 handful fresh parsley, roughly chopped
5 large Medjool dates, pitted and chopped
1/3 cup roasted pecans, roughly chopped
2 big handfuls microgreens
FOR THE DRESSING
1/2 large lemon, juiced (or a whole small lemon)
1/3 cup mayonnaise
2 garlic cloves, minced
1 tsp Dijon mustard
1/4 cup fresh dill, chopped
1 tbsp maple syrup
1/4 cup extra-virgin olive oil
1/2 cup freshly grated parmesan
salt and pepper to taste
INSTRUCTIONS
Chop and Prep: Dice the celery, apples, and chop the red bell pepper, parsley, and dates. Toss them into a large salad bowl with the roasted pecans and microgreens.
Make the Dressing: In a small bowl or blender, whisk together the lemon juice, mayonnaise, minced garlic, Dijon mustard, dill, maple syrup, and olive oil. Stir in the grated parmesan and season with salt and pepper until well combined.
Assemble the Salad: Pour the dressing over the salad and toss everything together until well coated. Let it sit for a few minutes to let the flavours meld.
