Ultimate Veggie Burgers

These veggie burgers are seriously good! They’re packed with hearty mushrooms, black beans, and walnuts, giving them a rich, meaty texture without the meat. The curry powder and paprika add a warm, smoky flavour, while the garlic and onion bring just the right amount of bite. They crisp up beautifully in the pan, with a golden crust that makes every bite so satisfying. Pile them onto soft brioche buns with cheddar, mayo, Dijon, crisp lettuce, tomato, and pickles for a burger that’s not only delicious but surprisingly filling.

WHAT YOU’LL NEED

  • 1 carrot, diced

  • 1 small red onion, diced

  • 2 cups mixed mushrooms, chopped

  • 1 can black beans, drained and rinsed

  • 3 garlic cloves, minced

  • ½ tsp curry powder

  • 1 tsp paprika

  • ½ tsp oregano

  • Salt and pepper to taste

  • Butter (for frying)

  • ½ cup walnuts

  • ½ cup panko breadcrumbs

  • 2 eggs

  • 1 tbsp tomato paste

  • Olive oil (for frying)

FOR THE BURGER

  • Brioche burger buns

  • Cheddar cheese

  • Mayonnaise

  • Dijon mustard

  • Lettuce

  • Tomato

  • Pickles

INSTRUCTIONS

  1. Heat butter in a pan over medium heat. Sauté the carrot, onion, mushrooms, black beans, and garlic until soft (about 8 minutes). Season with curry powder, paprika, oregano, salt, and pepper.

  2. Transfer to a blender with the walnuts and pulse until well combined but still slightly chunky.

  3. In a bowl, mix the blended mixture with panko, eggs, and tomato paste until well combined.

  4. Form into patties and place on a parchment-lined tray. Refrigerate for 30 minutes to firm up.

  5. Heat olive oil in a pan over medium heat. Fry the patties until golden and crispy on both sides (about 3–4 minutes per side).

  6. Serve on brioche buns with cheddar, mayo, Dijon, lettuce, tomato, and pickles. Enjoy!
