1tspcorn starch
1cupsrolled oats
1cupsall-purpose flour
3/4cuppacked brown sugar
1/2tspbaking powder

1/2cupconfectioners sugar
Instructions
Prepare the Strawberry Filling: In a small pot over medium-high heat, add the chopped strawberries, lemon juice, and maple syrup. Let this mixture simmer for about 10 minutes, stirring occasionally. Use a fork to mash the mixture slightly, then add the cornstarch and mix well. Continue to simmer for an additional 2-3 minutes, then remove from heat and set aside.
Make the Crumble: In a mixing bowl, combine the oats, flour, sugar, baking powder, cinnamon, salt, and butter. Use your fingers to pinch the mixture together until it becomes crumbly.
Assemble the Bars: Preheat your oven to 375°F (190°C). Line an 8×8 baking dish with parchment paper. Add half of the crumble mixture to the bottom of the dish, pressing it down into an even layer. Pour the strawberry mixture over the crumble and spread it evenly. Sprinkle the remaining crumble mixture on top.
