The Best Chocolate Chip Banana Muffins

Prep time : 10 minutes | Cook time: 25 minutes | Makes 6 large muffins

WHAT YOU’LL NEED

  • 3 ripe bananas, mashed

  • 6 tbsp butter, melted

  • 1/4 cup white sugar

  • 1/4 cup brown sugar

  • 1/2 cup rolled oats

  • 1 tsbp vanilla extract

  • 1 egg

  • 1 cup flour

  • 1 tsp baking soda

  • 1 tsp baking powder

  • 1/3 cup dark chocolate chips

  • 1/3 cups walnuts, chopped

INSTRUCTIONS

  1. Preheat the Oven: Preheat your oven to 350°F (175°C) and line a muffin tray with paper liners.

  2. Mix Wet Ingredients: In a medium mixing bowl, whisk together the wet ingredients until well combined.

  3. Combine Dry Ingredients: In a separate large bowl, whisk together the dry ingredients until evenly mixed.

  4. Combine Mixtures: Gently fold the wet mixture into the dry ingredients until just combined. Then, fold in the chocolate chips and walnuts.

  5. Fill Muffin Cups: Pour the batter into the lined muffin tray, filling every other muffin cup. Don’t be shy—fill each cup all the way to the top!

  6. Bake: Bake in the preheated oven for about 20-25 minutes, or until the tops are golden brown and a toothpick inserted into the centre comes out clean.

  7. Allow the muffins to cool slightly in the tray before transferring them to a wire rack. Enjoy!
