Strawberry Oat Bars

WHAT YOU’LL NEED
3 cups strawberries
1/2 lemon juiced
2 tbsp maple syrup
1 tsp corn starch
1 cups rolled oats
1 cups all-purpose flour
3/4 cup packed brown sugar
1/2 tsp baking powder
1 tsp cinnamon
pinch of salt
1/2 cup melted butter
2 tbsp milk
1/2 cup confectioners sugar
INSTRUCTIONS
Prepare the Strawberry Filling: In a small pot over medium-high heat, add the chopped strawberries, lemon juice, and maple syrup. Let this mixture simmer for about 10 minutes, stirring occasionally. Use a fork to mash the mixture slightly, then add the cornstarch and mix well. Continue to simmer for an additional 2-3 minutes, then remove from heat and set aside.
Make the Crumble: In a mixing bowl, combine the oats, flour, sugar, baking powder, cinnamon, salt, and butter. Use your fingers to pinch the mixture together until it becomes crumbly.
Assemble the Bars: Preheat your oven to 375°F (190°C). Line an 8x8 baking dish with parchment paper. Add half of the crumble mixture to the bottom of the dish, pressing it down into an even layer. Pour the strawberry mixture over the crumble and spread it evenly. Sprinkle the remaining crumble mixture on top.
Bake: Bake in the preheated oven for 25-30 minutes, or until the top is golden brown. Allow the bars to cool completely in the dish before cutting.
Prepare the Drizzle: In a small bowl, whisk together the milk and confectioners' sugar until you reach your desired consistency. Drizzle the mixture over the cooled bars before serving.
