Smoked Salmon Toastie

This is one of those meals that feels fancy but is so simple to make. It’s all about the buttery, crispy bread that gets toasted to perfection, creating that golden crunch you crave (stay away from the toaster for this recipe, trust me). Then, you’ve got the rich, smoky salmon that melts in your mouth, giving it that luxurious depth of flavour. And here’s a tip, since I started growing my own microgreens, it’s been an absolute game changer. You always have them on hand, so when you whip up a recipe like this, you can just grab a handful and throw them on top for that fresh, flavourful (and nutritious) kick. And smoked salmon in the freezer? Always.

WHAT YOU’LL NEED

  • 1 slice of fresh sourdough bread

  • 1 tsp olive oil

  • 1 recipe of cheesy scrambled eggs (found in my recipes)

  • 1 handful micro greens

  • 3 slices of smoked salmon

  • 1/2 lemon

INSTRUCTIONS

  1. Toast the Sourdough: Heat a skillet over medium heat and drizzle with olive oil. Toast the sourdough slices until both sides are golden and crisp.

  2. Assemble: Layer the toasted bread with scrambled eggs, smoked salmon, and a handful of microgreens. Finish with a squeeze of fresh lemon juice on top.

  3. Enjoy immediately!
