Dreamy Grilled Cheese

Grilled cheese is one of those meals that just never gets old. It's simple, comforting, and no matter how many times you make it, it always hits the spot. I mean, combining the three greatest ingredients of all—bread, butter, and cheese—is a blessing. It’s one of those meals that you can’t go wrong with. Maybe you’re in the mood for something classic? Grilled cheese. Craving something luxurious? Grilled cheese with pesto and chorizo. Feeling a little French? Croque monsieur, of course. It’s so easy to mix it up and hard to mess it up. The trick? Cook it low and slow.

WHAT YOU’LL NEED

  • 4 slices sourdough bread

  • 1.5 cups cheddar cheese, mix of old and mild, white and orange, grated

  • 2 tbsp butter

  • fresh cracked pepper

INSTRUCTIONS

  1. Spread butter evenly on both sides of the sourdough slices. Sprinkle the grated cheese and a crack of pepper between the slices to create your sandwich.

  2. Heat a skillet over low heat. Cook the sandwich slowly, about 5 minutes per side, until golden brown and the cheese is fully melted.

  3. Slice and enjoy while warm.
