Shakshuka with breakfast sausage

Shakshuka is the ultimate breakfast comfort food, and adding breakfast sausage makes it even better. The rich, spiced tomato sauce and perfectly cooked eggs pair beautifully with the savoury sausage, but the real game-changer? Serving it with fresh bread to soak up all the flavours. It’s a breakfast worth waking up for!
WHAT YOU’LL NEED
1 yellow onion, diced
1 red bell pepper, diced
2 garlic cloves, minced
1 tbsp olive oil
1 pack of small breakfast sausage (you can use any sausage you’d like)
1 x 800ml can of diced tomatoes, I use the Aurora brand
1 tbsp dried oregano
1 tsp salt
fresh ground pepper
4 eggs
1/4 cup fresh parsley, chopped
fresh sourdough loaf
INSTRUCTIONS
Cook the Sausage: Heat 1 tbsp olive oil in a cast iron skillet over medium heat. Add the breakfast sausage (halved if preferred). Cook until golden brown, about 8 minutes.
Sauté Vegetables: Add the diced onion and red bell pepper to the skillet, cooking for 4-5 minutes until softened. Stir in the minced garlic and cook for another minute until fragrant.
Simmer the Sauce: Sprinkle in 1 tbsp dried oregano and pour in the can of diced tomatoes. Stir to combine, adding a splash of water if the mixture seems too thick. Season with salt and pepper, then let it simmer on low for about 10 minutes, allowing the flavors to meld.
Add the Eggs: Using a spoon, create 4 small wells in the sauce and carefully crack an egg into each one. Let the eggs simmer on low heat for about 8 minutes or until the eggs are cooked to your desired doneness.
Serve: Sprinkle fresh parsley over the Shakshuka and serve with warm, crusty sourdough bread for dipping. Enjoy!
