WHAT YOU’LL NEED
185 g flour
1 tsp baking soda
1 tsp ground ginger
1 tsp ground cinnamon
1/4 tsp salt
65 g butter, softened
100 g white sugar + extra for dusting
50 g brown sugar
50 g molasses
1 egg
1/2 tsp vanilla extract
INSTRUCTIONS
Mix Dry Ingredients: In a medium bowl, whisk together flour, baking soda, ginger, cinnamon, and salt.
Mix Wet Ingredients: In a large bowl, beat together butter, granulated sugar, and brown sugar for 2 minutes. Add molasses, egg, and vanilla; beat until smooth. Gradually add the dry ingredients to the wet mixture. Chill dough in the fridge for at least 20 minutes.
Bake: Preheat oven to 350°F (175°C). Roll dough into medium sized balls, coat in sugar, and place on a parchment-lined baking tray. Bake for 12 minutes.
Let cool for 5 minutes before transferring to a wire rack. Enjoy!
