WHAT YOU’LL NEED

  • 185 g flour

  • 1 tsp baking soda

  • 1 tsp ground ginger

  • 1 tsp ground cinnamon

  • 1/4 tsp salt

  • 65 g butter, softened

  • 100 g white sugar + extra for dusting

  • 50 g brown sugar

  • 50 g molasses

  • 1 egg

  • 1/2 tsp vanilla extract

INSTRUCTIONS

  1. Mix Dry Ingredients: In a medium bowl, whisk together flour, baking soda, ginger, cinnamon, and salt.

  2. Mix Wet Ingredients: In a large bowl, beat together butter, granulated sugar, and brown sugar for 2 minutes. Add molasses, egg, and vanilla; beat until smooth. Gradually add the dry ingredients to the wet mixture. Chill dough in the fridge for at least 20 minutes.

  3. Bake: Preheat oven to 350°F (175°C). Roll dough into medium sized balls, coat in sugar, and place on a parchment-lined baking tray. Bake for 12 minutes.

  4. Let cool for 5 minutes before transferring to a wire rack. Enjoy!
