Healthy Oat Pancakes

WHAT YOU’LL NEED

  • 1 banana

  • 1 egg

  • 3/4 cup oats

  • 1/4 cup milk of your choice

  • 1 tsp baking powder

  • pinch of cinnamon

  • pinch of salt

TOPPINGS

  • plain greek yogurt

  • maple syrup

  • fresh berries

  • hemp seeds

INSTRUCTIONS

  1. Prepare the Batter: In a blender, combine all the ingredients and blend until smooth.

  2. Cook the Pancakes: Heat a pan over medium heat and add a pat of butter. Scoop about 1/4 cup of the batter onto the pan. Cook for about 2 minutes or until the edges are set and the bottom is lightly golden. Flip and cook for an additional 1-2 minutes on the other side until golden brown.

  3. Serve: Top your pancakes with your choice of toppings. I recommend plain Greek yogurt, maple syrup, fresh berries, and hemp seeds for a delicious finish!
