Peach, Carrot & Ginger Refresher

I don’t usually make drinks, but this one was way too good not to share.

It started with a fridge full of very ripe peaches that were too good to let go to waste, and somehow turned into the most refreshing little summer drink. It’s bright from the lime, naturally sweet from the peaches and honey, with a little warmth from fresh ginger and a subtle earthiness from the carrots.

The best part is how simple it is. Everything goes into the blender, gets strained, and you’re left with this beautiful fresh juice that you can keep in the fridge and turn into a drink whenever you want one. I like muddling a little extra peach and mint right in the glass before adding ice, then topping it with sparkling water for a little fizz.

It’s fresh, fruity and not overly sweet, basically summer in a glass. And while I don’t normally share drinks around here, this one earned its spot.

Peach, Carrot & Ginger Refresher

Prep Time 10 minutes
Makes 1 large pitcher

Ingredients

  • 8 very ripe peaches pits removed
  • 2 limes peel removed
  • 4 carrots
  • 2 heaping tbsp honey
  • 1/2 cup coconut water
  • 1 thumb-sized piece fresh ginger optional

For Serving

  • 1/2 peach per glass
  • A few fresh mint leaves
  • Ice
  • Sparkling water or coconut water

Instructions

  • Add the peaches, lime, carrots, honey, coconut water and ginger to a blender. Blend for a couple of minutes, until completely smooth.
  • Pour the mixture through a fine-mesh strainer into a large bowl or pitcher. Use the back of a spoon or your hands to really press and squeeze the mixture, getting out as much of the juice as possible.
  • For each drink, add 1/2 peach and a few mint leaves to the bottom of a glass. Muddle them together.
  • Fill the glass with ice, then pour in about 3/4 of the peach-carrot juice. Top with sparkling water for some fizz, or coconut water for a softer, naturally sweet finish.
  • Give it a stir, add a little fresh mint if you like.
