Smoked Salmon Toast

This Smoked Salmon Toast is a deliciously satisfying way to elevate your breakfast or brunch. The combination of creamy goat cheese, tangy capers, and smoky salmon topped with a perfectly cooked egg makes for the ultimate morning indulgence. Plus, it’s super customizable with your favourite herbs like dill or mint, and a fresh squeeze of lemon for that added zing.

WHAT YOU’LL NEED

  • 4 slices sourdough bread (or your favorite morning bread)

  • Smoked salmon (about 2 slices per toast)

  • 3 tbsp lemon juice + extra lemon wedges for garnish

  • 4 eggs

  • 1/2 cup goat cheese OR you can use cream cheese

  • 1 rounded tbsp chopped capers

  • Alfalfa sprouts

  • Salt and pepper

  • Fresh dill or mint

INSTRUCTIONS

  1. Toast the bread to your liking.

  2. Fry or poach the eggs to your liking, ensuring the yolk remains runny if desired.

  3. In a bowl, mix the goat cheese, capers, dill or mint, and the lemon juice. Season with salt and pepper.

  4. Spread the goat cheese mixture on the toast, then top with alfalfa sprouts, smoked salmon, and the egg.

  5. Garnish with extra lemon wedges and enjoy!
