WHAT YOU’LL NEED
2 english muffins
2 fresh sausages
1/3 lb ground beef, seasoned with salt and pepper
2 eggs
4 slices cheddar cheese
salt and pepper to taste
INSTRUCTIONS
Make the Sausage Patty: Remove the sausage meat from the casings and place it in a bowl. Add the seasoned ground beef, aiming for 1/4 lb of combined meat per sandwich. Mix well with your hands and shape into medium-sized balls. Flatten the balls into patties, making them larger than the English muffins, as they will shrink while cooking.
Cook the Patties: In a skillet, heat a drizzle of olive oil over medium-high heat. Fry the patties for about 5 minutes on each side, or until they are golden brown. Once cooked, set them aside.
Fry the Eggs: In the same skillet, fry the eggs sunny-side up, seasoning them to taste.
Toast the English Muffins: While the eggs are cooking, toast the English muffins until golden.
Assemble: Layer each toasted English muffin with a sausage patty, a sunny-side-up egg, and a slice of cheddar cheese. Serve warm and enjoy!
