Roasted Veg & Sausage

Prep time : 20 minutes | Cook time: 30 minutes | Makes 2 servings

WHAT YOU’LL NEED

  • 2 large sweet potato

  • 1 red onion

  • 2 sweet red peppers

  • 1 bunch of brussels sprouts, about 2 cups (**I blanch these prior to cooking. Remove the stem, slice in half, and boil in water for about 3 minutes, until soft)

  • 1 bunch of broccolini

  • your favourite sausages (I used mild Italian)

  • olive oil

  • salt & pepper

INGREDIENTS

  1. Prepare the Vegetables: Wash and cube the sweet potato, onion, pepper, and broccolini into bite-sized pieces. Toss them along with the Brussels sprouts into a baking tray with olive oil, salt, and pepper. Bake at 400 degrees F for about 30 minutes, or until the vegetables are soft.

  2. Cook the Sausages: Prepare your sausages according to your preferences. You can BBQ them on medium-high heat for 10-15 minutes, rotating a couple of times, or bake them in the oven at 400 degrees F for about 30 minutes, or until golden brown.

  3. Serve: Plate everything warm and serve immediately.
