Mini Meatballs

Who says meatballs have to be the centrepiece of a meal? I find these little flavour-packed bites are perfect for snacking anytime. Golden and crisp on the outside, tender and juicy on the inside, they’re the ultimate grab-and-go treat. Make a batch, and you’ve got a week of quick, delicious snacks ready to reheat in minutes—or toss them into your favourite pasta, pair them with a Greek salad, or serve as a flavourful side!

WHAT YOU’LL NEED

  • 500g ground beef

  • 1 small red onion, minced

  • 1 egg

  • 1/2 cup breadcrumbs

  • 1/4 cup packed fresh chopped parsley

  • 1 tbsp oregano

  • 1 tbsp dried thyme

  • 4 cloves garlic, minced

  • 1/2 cup parmesan, grated

  • 1 tbsp salt

  • fresh cracked pepper

  • 1 tbsp olive oil

INSTRUCTIONS

  1. Prep and Mix: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper. In a large bowl, combine all ingredients and mix until well blended, avoiding over mixing.

  2. Shape: Scoop out about 1 tablespoon of the mixture and roll into balls with your hands.

  3. Bake: Place the meatballs on the prepared baking sheet and bake for 30 minutes, or until golden brown and fully cooked.

  4. Cool and Store: Allow the meatballs to cool before transferring them to airtight containers for storage in the fridge or freezer.
