Egg Sandwich

Sometimes, the best breakfasts are the simplest. Let the ingredients speak for themselves— delicious chewy, toasted sourdough, melty cheddar, a perfectly fried egg, fresh arugula, and a little mayo to bring it all together. It’s rich, flavourful, and exactly what you need to start the day right. The only real debate? Whether the egg should be runny or not. What’s your take?
WHAT YOU’LL NEED
4 eggs
1 tbsp butter
4 slices sourdough bread
2 tbsp mayonnaise
1 handful arugula
4 slices sharp cheddar
INSTRUCTIONS
Heat a pan over medium heat and melt the butter.
Crack the eggs into the pan and cook to your preferred doneness—runny, jammy, or fully set. Place a slice of cheddar on each egg, allowing the residual heat to melt it slightly.
While the eggs cook, toast the sourdough slices until golden and crisp, preferably in a pan with some olive oil or butter for extra flavour.
Spread a thin layer of mayo on each slice of toast.
Add the fried eggs and cheese on top of the bread, then layer on a handful of fresh arugula.
Top with the remaining slices of sourdough and press down lightly. Slice in half, serve warm, and enjoy!
